Cooking with Maple Syrup

Yes, you can substitute maple syrup for sugar in cooking and baking! There are just a few things to keep in mind. 

Maple syrup has a lot more moisture in it than dry sugar, so it adds liquid to your recipe which needs to be compensated, especially in baking recipes.

And it adds flavor, the wonderful flavor of maple syrup, which pairs well with most foods, especially baked goods, pies and meats and fish.

General conversions from sugar to maple syrup

For each 1 cup of white granulated sugar use

  • 1 cup of maple granulated sugar (no change is need to the liquids in the recipe)
    or
  • 1 cup maple syrup (and also reduce other liquids in the recipe by 1/2 cup

For each 1 cup of packed brown sugar use:

  • 1 cup plus 1 tbsp. maple granulated sugar (no change is need to the liquids in the recipe)
    or
  • 1cup plus 1 tbsp. maple syrup (and also reduce other liquids in the recipe by 1/2 cup
